Simple French Toast

Vegan Banana French Toast Jickety Jacq
Don't let french toast being vegan scare you, it's even better than the traditional bread dipped in egg batter variety; I promise you won't even miss it! And this recipe comes together so quickly you can even whip it up on a busy morning. I like to keep things simple; cooking satisfying, healthy food doesn't have to be complicated. Try this out tomorrow morning...
Vegan Banana French Toast Batter Jickety Jacq
Prepare the batter.
Cooking Vegan Banana French Toast Jickety Jacq
Dip bread in batter until well coated. Place in pan.

Cook 2-3 minutes on each side until golden brown.

Sprinkle with cinnamon (if desired) to serve.
This vegan french toast is banana based goodness, but if you hate banana you can easily swap it with applesauce or any other mashed fruit puree. I bet strawberry would be out of this world. Hmm, I may have to try that in the very near future... It also has almond butter and chia seeds for added protein and healthy fats to keep you full and energized until lunch. You've got to try this.

Simple French Toast

Serves 2, or 1 hungry person (full disclosure: I am always the hungry person)

Ingredients:

1 banana or fruit of choice mashed (try 1/4 cup applesauce or 6-8 mashed strawberries as an alternative)
1/4 cup non-dairy milk of choice (I use almond coconut blend)
1 Tablespoon chia seeds
1 Tablespoon almond butter (or peanut butter/nut butter of choice)
4 slices whole grain bread/bread of choice (I use Food for Life 7 sprouted grains)

Directions: 
-Place banana (or fruit of choice) in a shallow bowl and mash well with fork. If fruit is too firm to mash easily, microwave for 15-30 seconds and then mash. 

-Add 1/4 cup non-dairy milk to bowl with mashed fruit and whisk together with fork until combined. Use more or less milk as needed to slightly thin out fruit puree. Add chia seeds and almond butter, whisking together with fork after adding each. 

-Lightly grease a medium sized pan and place over medium heat on stove.

-When batter looks well incorporated, dip slice of bread in on each side for a few seconds, being sure the bread is well-coated, and place in pan.

-Cook for 2-3 minutes on each side until golden brown. Repeat with remaining slices of bread. Serve on plate with cinnamon sprinkled over top if desired. Enjoy!

This recipe can be easily doubled or tripled for serving a larger group. Hope you enjoy it, let me know!
