Vegan, Gluten-Free Chocolate Pizzelle

Perfectly crispy and super quick and easy to make!
When I first posted that I was making these on Instagram everyone wanted the recipe! And with good reason. These come together so quickly, and I've finally figured out the missing link to provide lasting crispness to vegan pizzelle. Traditional pizzelle recipes have egg, and quite a bit of it. My family recipe calls for six eggs, so you really need a stellar substitute that can provide the same structural integrity that they do. I'm so excited that I was finally able to do that! 
​How you ask? The wonderful Just Egg. If you haven't tried this stuff yet, I highly recommend you get your hands on some if at all possible. Not only does it cook up into great mock scrambled eggs and omelets, it also works exceptionally well as an egg substitute in baking! It is among the best I've found for those tricky recipes that just don't come out the same as their animal-part laden originals. 

So without further ado...

Vegan Gluten-Free Chocolate Pizzelle

Yield: 12-14 
(Can be doubled)


Ingredients:
1/4 cup Just Egg
1/3 cup white or coconut sugar
1/4 cup melted coconut oil*
3/4 cup Bob's Gluten Free 1 to 1 Baking Flour
2 tablespoons cocoa powder
1/4 teaspoon baking powder

+optional extract of choice would also be a nice addition!

****Plug in your pizzelle iron before you begin mixing up your ingredients so it will be all heated up and ready once your batter is mixed.****

Directions:
-Whisk just egg and sugar well in bowl.

-Add melted oil and mix again.

-Add flour, cocoa powder, and baking powder and mix until smooth. Do not leave any clumps. Batter will be sticky, and not too thick or runny.

-Drop a tablespoon of batter over the center of each of the 2 pizzelle plates and close the lid slowly. (You will likely need a small rubber/silicone spatula to get it completely off your spoon.) Cook for 1-2 minutes. Remove cookies with metal spatula and lie flat on cooling rack to cool. They crisp up very quickly as they cool. 

-Enjoy!

*Note: Melted margarine may also be used, but in my trials the cookies stuck and had to be pried off the pizzelle iron. But feel free to experiment with your favorite ingredients!
